Grilled vegetable platter with Silex grill
Ingredients (for 2-3 servings)
Vegetables
-
1 small zucchini
-
1 small aubergine
-
1 red bell pepper
-
1 yellow bell pepper
-
1 small red onion
-
6–8 mushrooms
-
1 small carrot (optional)
marinade
-
3 tablespoons olive oil
-
1–2 tablespoons lemon juice
-
1 tsp honey or maple syrup (optional)
-
2 cloves of garlic, finely chopped
-
1 tsp sweet paprika powder
-
1/2 tsp cumin (optional)
-
Salt and pepper to taste
-
Fresh herbs: thyme, rosemary or parsley
Optional for serving

Feta or Halloumi
-
Hummus or yogurt dip
-
Fresh flatbread or baguette
preparation
1. Prepare the vegetables
-
Cut the zucchini and aubergine lengthwise into 0.5 cm thick slices .

Remove the seeds from the bell peppers and cut them into large pieces .

Cut the onion into rings or strips .
-
Halve or quarter the mushrooms, slice the carrot thinly.
2. Prepare the marinade

Mix olive oil, lemon juice, honey, garlic, paprika, cumin, salt and pepper in a small bowl.

Place the chopped vegetables in a large bowl.

Mix thoroughly with the marinade and let it sit for 10-15 minutes .
3. Prepare the Silex Grill

Preheat the grill to medium heat (approx. 180–200 °C).

Optional: Lightly brush the grill with oil to prevent the vegetables from sticking.
4. Grill vegetables

Place the vegetables evenly on the grill , not too close together.
-
Close the lid (if possible) for 5–7 minutes .

Turn the vegetables over and grill for another 3-5 minutes until they are soft and lightly browned.

Optional: Slice feta or halloumi and grill for the last 2 minutes .
5. Serving
-
Arrange the vegetables on a plate.

Sprinkle with fresh herbs.

Optional: Serve with hummus, yogurt dip or flatbread.
Tips for the Silex Grill
-
Thin slices cook faster – thicker slices may need to be pre-cooked slightly or grilled for longer.
-
Do not let the grill temperature get too high , otherwise the vegetables will burn on the outside and remain raw on the inside.

For extra flavor: Add a few drops of lemon juice or a drizzle of olive oil to the vegetables before serving.
